Introduction:

 

Hello! This cookbook is a compilation of some of the foods that I like to eat. I come from a Chinese family so most of these are Chinese foods. My mom cooks many authentic Chinese dishes so most of the recipes are Chinese. The others are some recipes that she picked up from in the past that I’ve enjoyed. These recipes are some of my favorites to and I hope you enjoy them!

Avocado Toast

This is a healthy breakfast recipe that is very easy to make and also delicious.

One 8-ounce ripe avocado, halved, pitted and peeled

Fine salt and freshly ground black pepper

4 slices whole grain or whole wheat bread

1 clove garlic, peeled and halved

2 tablespoons extra-virgin olive oil or unsalted butter, softened

Flaky sea salt, for serving

Recipe

Mash the avocado with a fork in a shallow bowl until chunky. Season with fine salt and black pepper.
Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic. Lightly brush the toasts with oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

Chinese Pancake.

Whenever we run out of things to eat for breakfast, my mother whips out the Chinese pancake. This is a classic Chinese breakfast that is one of my favorites.

Ingredients

3 cups all-purpose flour
1-1/3 cups boiling water
4 teaspoons sesame oil
6 green onions, chopped
1 teaspoon salt
1/2 cup canola oil

Recipe

Put flour in a large bowl and stir in boiling water until dough forms a ball. Turn onto a floured surface and knead until smooth and elastic. Around 4-6 minutes. Place in a large bowl and cover. Let rest for 30 minutes.
Divide dough into 8 portions. Roll each portion into an 8-inch circle. Brush with 1/2 teaspoon sesame oil and sprinkle with 1 heaping tablespoon of green onion and 1/8 teaspoon salt. Roll into a thin cylinder. Starting at one end, twist cylinder onto itself forming a coil, pinching to seal. Flatten slightly. Roll each coil to 1/8-inch in thickness.
In a large skillet, heat 1 tablespoon canola oil. Over medium-high heat, cook 1 pancake at a time until golden brown. Around 2-3 minutes each side.

Bread Loaf

This is a recipe that my mom found to use when in quarantine and we ran out of bread. It is a great bread recipe.
Ingredients:
2 cups all purpose flour
1 cup milk
1 egg
3 tbsp sugar
¼ tsp salt
1/3 stick butter
1.5 tsp instant yeast
Recipe:
Stir egg, then put in the bread maker;
Add milk, sugar, salt, flour, and yeast into the bread maker;
Choose sweet, medium, and press start button;
When finished, let bread cool and enjoy.

Fried Chicken Wings

This is a recipe that my mom uses to make the best chicken wings that I have had. They’re just so good. One of my favorite recipes.

Ingredients

2 lb. chicken wings
Kosher salt
Freshly ground black pepper
2 c. all-purpose flour
1 tsp. garlic powder
1/2 tsp. mustard powder
1/4 tsp. cayenne pepper
Vegetable oil, for frying

Recipe

Rinse wings under cold water then pat dry with paper towels. Place wings on a baking sheet lined with a cooling rack then season wings on both sides with salt and pepper. Refrigerate for 1 hour. In a shallow bowl, stir together flour and spices then season with salt and pepper. Working one at a time, coat chicken in flour mixture. In a large pot over medium heat, heat 2” oil until shimmering (about 350°) Working in batches, fry chicken until deeply golden and cooked through, 8 minutes. Drain on a paper towel lined plate. Serve warm.

Red Bean Paste Steamed Buns

This is an all-time favorite dish of red bean paste buns. I have loved to eat this my whole life. My mom makes these all the time and can be eaten as an entree, appetizer, breakfast, and even dessert.
Ingredients
3 cups all-purpose flour
1 tablespoon yeast
1 teaspoon sugar
1 teaspoon baking powder
1 cup of warm water
1 can red bean paste
Recipe
In a large bowl, mix yeast, sugar, and baking powder with 1/3 cup of warm water until the mixture produces bubbles.
Pour flour into the large bowl, add the rest of the water, mix them together and knead until the dough becomes smooth.
Cover the dough with the plastic wrap and set aside for 1 hour.
Shape the dough into a long roll, split the roll into 16 small equal pieces.
Roll out the one piece of dough into a thin circle wrap, put a 2 tablespoon red bean paste in the center of the wrap, fold the wrap over the fillings, and seal the edge together. Repeat step 5 for all of the 16 pieces.
Fill the water in the steamer, arrange the raw finished buns in the upper layer of the steamer, cover the steamer. Heat the steamer for 20 minutes after the water boils.
Take out the buns from the steamer, and enjoy.

Deep-Fried Oil Strip

This is a classic Chinese breakfast food sold all over China. It is a delicious recipe that can be eaten alone or dipped in soy milk.

Ingredients:
2 cup all purpose flour
2 ½ tsp salt
1 tbsp baking powder
½ tsp baking soda
250 ml warm milk
Steps:
In a large bowl, put salt, baking powder, baking soda into flour, mix together.
Add milk into bowl with flour, knead the dough until smooth.
Set the dough aside for one hour.
Put the dough on a large flat board, make the dough into a rectangle shape with 1 inch thick, and set it aside for another 30 minutes.
Cut the rectangle shaped dough into small pieces, with dimension of 2 inches wide, 6 inches long, and 1 inch thick.
Put great amount of oil into the large deep pan, heat the pan until the oil temperature reaches 200 F degree, put small pieces into the pan, stir until the color turns golden.
Take the fried sticks from the pan and repeat until finishing all of the pieces.
Enjoy!

Tomato Egg Stir Fry

This is a easy stir fry recipe that is a staple in my huse. It is one of my favorite recipes.

Ingredients

4 small to medium tomatoes (about 500 g, 1 pound)
1 scallion
4 eggs
3/4 tsp salt (divided, or to taste)
1/4 tsp white pepper
1/2 tsp sesame oil
3 tbsp vegetable oil (divided)
2 tsp sugar
1/4-1/2 cup water
Instructions
Start by cutting tomatoes into small wedges and finely chop the scallion.
Crack 4 eggs into a bowl and season with ¼ teaspoon salt, ¼ teaspoon white pepper, and ½ teaspoon sesame oil. Beat eggs for a minute.
Preheat the wok over medium heat until it just starts to smoke. Then add 2 tablespoons of oil and immediately add the eggs. Scramble the eggs and remove from the wok immediately. Set aside.
Add 1 more tablespoon oil to the wok, turn up the heat to high, and add the tomatoes and scallions. Stir-fry for 1 minute, and then add 2 teaspoons sugar, ½ teaspoon salt, and ¼ cup water (if your stove gets very hot and liquid tends to cook off very quickly in your wok, add a little more water). Add the cooked eggs.
Mix everything together, cover the wok, and cook for 1-2 minutes, until the tomatoes are completely softened.

Uncover, and continue to stir-fry over high heat until the sauce thickens to your liking. Serve!

Pizza

This is a recent recipe that my mom has been trying out. THis delicious pizza won’t disappoint.
Ingredients:
3 cups all-purpose flour
1 tablespoon yeast
1 teaspoon sugar
1 teaspoon baking powder
1 teaspoon oil
1 cup of warm water
Topping:
Pizza source
Mozzarella cheese (shred)
Pepperoni
Vegetables (options)
Procedure:
In a large bowl, mix yeast, sugar, and baking powder with 1/3 cup of warm water until the mixture produces bubbles.
Pour flour into the large bowl, add the rest of the water and oil, mix them together and knead until the dough becomes smooth.
Cover the dough with the plastic wrap and set aside for 1 hour.
Roll out the dough into a large thin circle to fit the pizza pan, oil the bottom of the pizza pan, put the pizza dough on the pizza pan.
Put pizza sauce on the top of the dough, spread the cheese all over the dough, arrange the pepperoni and vegetables on the top of the cheese, and then another layer of cheese.
Preheat the oven 375F, put the pizza pan in the middle layer of the oven, bake for 30 minutes until cheese melt.
Take out the pizza pan from the oven and enjoy.

Fried Rice

I love this recipe for its savory taste and how quick it is to make. You can whip this one out in no more than 10 minutes! It is one of my go to foods.

Ingredients
1 tomato.
Chives
1 slice of extra lean ham
2 tbsp of vegetable oil
A pinch of salt
1 tsp of soy sauce
1 cup of rice
Rice cooker
Pan
Spatula

Recipe

Cook 1 cup rice with 1 and ½ cups of water in the rice cooker.
Cut the chives into strips of around 1 cm wide and 3-4 cm long. You want around 15 strips
Cut the tomato into 1 inch pieces. You want around 16 pieces
Cut the slice of ham into pieces around 1 inch long and 1 inch wide.
Break the two eggs into a bowl and stir
Put 1 tablespoon of oil onto the pan and turn the stove to high heat. (10)
Put the chives into the pan and mix until the chives have a yellowish tinge.
Pour the egg evenly into the pan. When it starts to clump together, separate it into small pieces with a spatula. Stir for around 2 minutes.
Put the tomatoes into the pan and mix until the edges turn slightly brownish. Typically around 1 minute
Put the ham into the pan and stir until the edges turn slightly brownish.
Add the cooked rice into the pan.
Add a pinch of salt and a dab of soy sauce.
Mix for around 2 minutes and until the rice turns slightly brown. If the rice clumps up, separate with spatula so it cooks evenly.
After, put the rice into a bowl and enjoy.

Lo Mein

This is a family favorite that is enjoyed every time we eat. It is the classic Lo Mein. Great Recipe.

Ingredients

8 ounces lo mein egg noodles*
1 tablespoon olive oil
2 cloves garlic, minced
2 cups mushrooms, sliced
1 red bell pepper, julienne
1 carrot, julienne
1/2 cup snow peas
3 cups baby spinach
Directions
In a large pot of boiling water, cook noodles according to package instructions; drain well.
Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes.
Stir in egg noodles and soy sauce mixture, and gently toss to combine.
Serve immediately.

Spaghetti

My mom likes to make this recipe before big swim meets because I once ate this recipe before a big meet and I went massive PRs so this is kind of my lucky food.

Ingredients

1 pound lean ground meat like beef, turkey, chicken or lamb

3 tablespoons olive oil

1 cup (130 grams) chopped onion

3 garlic cloves, minced (1 tablespoon)

2 tablespoons tomato paste

1/2 teaspoon dried oregano

Pinch crushed red pepper flakes

1 cup water

1 (28-ounce) can crushed tomatoes

Salt and fresh ground black pepper

Handful fresh basil leaves, plus more for serving

12 ounces dried spaghetti or favorite pasta shape

1/2 cup shredded Parmesan cheese

Recipe

MAKE SAUCE

Heat the oil in a large pot over medium-high heat. Add the meat and cook until browned, about 8 minutes. As the meat cooks, use a wooden spoon to break it up into smaller crumbles.

Add the onions and cook, stirring every once and a while, until softened, about 5 minutes.

Stir in the garlic, tomato paste, oregano, and red pepper flakes and cook, stirring continuously for about 1 minute.

Pour in the water and use a wooden spoon to scrape up any bits of meat or onion stuck to the bottom of the pot. Stir in the tomatoes, 3/4 teaspoon of salt, and a generous pinch of black pepper. Bring the sauce to a low simmer. Cook, uncovered, at a low simmer for 25 minutes. As it cooks, stir and taste the sauce a few times so you can adjust the seasoning accordingly. About 15 minutes before the sauce is finished cooking, bring a large pot of salted water to the boil then cook pasta according to package directions, but check if done a minute or two before the suggested cooking time. Take the sauce off of the heat, and then stir in the basil. Toss in the cooked pasta, and then leave for a minute so that the pasta absorbs some of the sauce. Toss again, and then serve with Parmesan sprinkled on top.

Smoothie. Serves 3 ish

This is a refreshing smoothie that is easily made and very healthy. My sister made this recipe by compiling random fruits and blending them.

Ingredients

2 cups watermelon

2 oranges

1 1/2 cup frozen pineapple

1 1/2 cup frozen mango

1 banana

1/2 lemon

1 1/2 frozen blueberries

Recipe

Blend until smooth. Top with optional fresh fruit.

Lemon Bars

This is a recipe that isn’t too sweet. It is a delicious recipe that doesn’t take that much time.

Ingredients:

1 cup of butter 230 grams, softened at room temperature.

1/2 cup of sugar, 125 grams.

2 cups of all purpose flour (All purpose flour) 320g,

1/2 teaspoon baking powder.

Lemon filling:

4 eggs

1 and 1/3 cups (300 grams) of white sugar.

1 tablespoon of lemon zest, now squeeze 1/3 cup (68 grams) of lemon juice (1-2 lemons).

1/4 cup (40g) medium gluten noodles

1/2 teaspoon baking powder, mix well.

Recipe:

Cake bottom: Put butter in a bowl, beat with a blender at high speed for a few minutes into a snowflake shape, then pour 1/2 cup of sugar and beat well, then divide the flour into two while stirring at high speed Put it in and beat evenly until the meat is filled. Then pour it into a 9-13 inch (22X32 cm) baking tray, smooth it with a rubber knife, put it in an oven preheated to 330F / 165 Celsius, and bake for 15 minutes.

Apple Pie

This is one of my favorite desserts that my mom makes once in a while. It is the classic Apple Pie.

Ingredients

1/2 cup sugar
1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
6 to 7 cups thinly sliced peeled tart apples
1 tablespoon lemon juice
Pastry for double-crust pie
1 tablespoon butter
1 large egg white
Additional sugar

Recipe

In a small bowl, combine the sugar, flour, and spices. Set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture, toss to coat.
Line a 9-inch pie plate with the bottom crust and trim even with edge. Fill with apple mixture and dot with butter. Roll remaining crust to fit the top of pie, place over filling. Trim, seal, and flute edges. Cut slits in crust.
Beat egg white until foamy, brush over crust. Sprinkle with sugar. Cover edges loosely with foil.
Bake at 375 for 25 minutes. Remove foil and bake until crust is golden brown and filling is bubbly. It should be 20-25 minutes longer. Cool on a wire rack.

Recipe: Cake Roll

This is a delicious dessert that my mom started making. It’s not the sweetest but its very good.

cake:

75 grams of low-gluten flour (cake & pastry flour) (1/2 cup, scooped directly from the noodle bag)

1/3 teaspoon baking powder, mix well with a fork and set aside

4 egg whites,

1/2 teaspoon of white vinegar

1/3 teaspoon of tart powder

1/4 cup of sugar (60 grams)

4 egg yolks

3 tablespoons of sugar (42 grams)

3 tablespoons of corn oil (36 grams)

1 teaspoon of mango extract (mango extract)

2.5 tablespoons of water;

Cream filling:

1/2 cup of whipping cream

1/4 cup of cream cheese

1/4 cup of icing sugar

One Luzon mango, peeled and cut into flesh.

Parchment paper is spread on the bottom of the 23 × 32 cm baking tray for use. Use two clean and water-free pots to hold egg white and egg yolk. Egg whites and white vinegar are beaten at high speed for a few minutes with a hand held mixer, then add 1/4 cup of sugar and beat for another 2 minutes. 3. Then beat the egg yolk with a mixer at high speed for 1 minute, add the sugar in the 3 ingredients until the sugar is dissolved. Add all the remaining 3 ingredients and mix well, then add 1 ingredient and beat at medium speed for 1-2 minutes until it is even. Put 1/3 of the previously beaten egg white into the egg yolk paste and mix well with a rubber knife. Then pour the egg yolk paste back into the remaining 2/3 egg whites and gently stir from top to bottom with a rubber knife to make the cake body delicate.
Pour the batter into the prepared baking sheet and smooth the surface. Place the baking tray in the oven preheated to 340F / 170 degrees Celsius and bake for 20 minutes. Use a knife to peel the cake around, invert the cake onto the clean baking sheet paper, and tear off the bottom baking sheet paper. Slightly cut off the four sides, roll up the cake along the short side, wrap it in baking paper, pinch the two ends tightly, and put it in the refrigerator for about 1 hour. Use a whisk to beat 4 ingredients of fresh cream at a high speed, then cream the cheese and add it to the whipped cream, add sugar powder and beat for another 1-2 minutes. After the cake is cooled in the refrigerator, open the baking sheet, gently open the cake roll, evenly spread the cream filling, and then put the mango strips. Rewind it, wrap it in baking paper, pinch it at both ends, and let it set in the refrigerator for 1 hour. Open the baking tray paper and slice to eat.
