Roi’s Shakshuka
4 cloves of garlic – chopped finely
4 ripe tomatoes – peaked and diced
1/2 green mild pepper
1/2 tsp chilly flakes
4 tbs olive oil – for the initial frying
Salt, pepper, 1 tsp of paprika powder
2 eggs per person – up to 8!
1 tbs of tomato paste
lightly fry the garlic and green pepper until scented, adding the paprika and chili flakes
After 20 seconds adding the tomatoes, seasoning and putting on low heat for 20 minutes.
When the tomatoes are melted add the tomato paste, if not enough liquids add 1/2 cup of water and cook for 15 more minutes on low heat.
Create little “dimples” in the sauce and Add the eggs .
Cook for 6-8 minutes until whites are firm and yellows are half runny.
Amazing homemade Israeli Falafel
2 cups of 8-12 hours soaked cheek peas
half a pack of fresh parsley
1 tbs ground coriander
1 tbs of salt
A bit of chilly flakes as you like
half tbs pepper
haps tsp of cumin
half tsp of paprika
2 tbs of flour
3 cloves of garlic
One small onions
Grinding all the above in a good mixer/blender/meat grinder.
Setting to rest for one hour in the fridge.
Forming palm sized balls in your hand, if too wet, add a bit of flour, if too dry, add a bit of water.
Fry the balls in deep oil on medium heat u till browned.
Serve with pita great, tahini sauce, pickled cucumber, parsley, tomatoes and a bit of hot sauce.

One green/yellow pepper
One stock of green onion
One onion
one Clove of garlic
2 ripe tomatoes
I can of tuna
I tablespoon of tomatoe paste
Salut, pepper, red paprika , chili flakes. A bit of sugar
Sauté the veggies for 10 minutes, add one ladle of pasta cooking water and the tomato paste , the tuna , the spices and lower the heat..wait for the pasta..then put the pasta in the Sauce and stir for 2 minutes..enjoy !
