TORRIJAS

Ingredients:
a load of bread from the day before

300 ml of milk

150 g of sugar

3 or 4 eggs

Cut the loaf of bread into slices

Deep them into milk and eggs

Fry them in very hot oil

Sprinkle the torrijas with sugar

CHOCOLATE CAKE

Ingredients:

butter           flour
milk            walnut         eggs          sugar

chocolate

Add 3 eggs and 3 spoons of milk

Add 80 g of flour and 150 g of sugar

Put the butter and chocolate in the microwave

Mix all together

Split the walnuts in tinny pieces

Blend the mixture and put it in the microwave for 5 minutes.

Curd cake

Real Latvian classic! Very simple especially you buy the dough at  supermarket in culinary department. You cut it in 8-12 pieces. Time for preparing 10 minutes, baking time 45 minutes.

·            1 Teaspoon butter

·            1Teaspoon flour

·            400 g sand dough

·            1 Teaspoon baking pouder

·            5 eggs

·            130 g sugar

·            1 Teaspoon vanilla sugar

·            pinch of cinnamon (could not be added)

·            600 g curd

 

1.  Heat the oven to 200°C. grease the round baking tin with butter and scatter the flour.

2.       Knead the baking powder into sand dough. The dough will be loose. Roll out the dough and fill in the baking tin, building up the dough edges, and pressing the edges so that there are no cracks. Put it in the oven and bake it for 10 minutes till the surface of the dough becomes easy brown. Then take the tin out of the oven.

3.   While the dough is baking you make the curd. Eggs with the sugar, vanilla sugar and cinnamon are mixed in the bowl. Then add the curd and mix it pressing hardly the curd lumps. If there is time you can push the curd through the sieve or grind with a meat cutter. Dried berries or nuts can be added.

4.   The curd is poured on the half baked surface. Bake it for 30-35 minutes- till curd is firm and becomes golden. Cut in pieces after it is cold.

If you make the dough yourself:

Sand dough

200 g butter

1 egg

3 – 4 glasses flour

Sugar approximately 1/3 of glass

½  Tea spoon  baking powder..

CURD: buckthorn, cranberries, nuts, poppy seeds.  Can be replaced with raisins, dried apricots, walnuts..

APPLE CAKE

Ingredients:
2 yogurts baking powder

6 eggs 500g of sugar

3 apples 250 ml of oil

750 g of flour cinnamon

Put 2 yogurts and 6 eggs and mix together

Peel 3 apples

Add the oil, the yogurts and the flour.

Add the baking powder

Pour the mixture onto the tray

Cover the mixture with apples

Add sugar and cinnamon on the top

Put it in the oven for 1/2 hour
