may i present to you the perfect dish for a cold night: home-made cinnamon rolls!
ingredients:
dough-
1 cup warm milk
4 1/2 teaspoons active dry yeast use the fast acting kind!
1/2 cup granulated sugar
1 teaspoon salt
1 egg
1/3 cup canola or vegetable oil
4-4 1/2 flour
filling-
1/3 cup salted butter softened
1 cup brown sugar
2 tabelspoons cinnamon
frosting-
1 cup softened butter
3 cups powdered sugar
3 Tablespoons heavy cream
1 teaspoon vanilla extract
-In a large liquid measuring cup, stir warm milk, yeast and 1 tablespoon of the granulated sugar together to dissolve. Stir and proof 5 minutes. Into the bowl of a stand mixer, measure out 3 cups of flour, the remaining sugar and salt.
-Once yeast mixture looks bubbly, pour into stand mixer with dry ingredients. Start to stir on low. Add in the egg and the oil. Scrape edges of bowl to stir flour in evenly. Knead 5 minutes on low.
-If dough seems a bit sticky, stir in 2 tablespoons of flour at a time until it starts pulling away from the bowl. (You still want it to be tacky, but not sticky enough to stick to your hands!) Rest dough 5 minutes.
-Preheat oven to 350 degrees. Line baking sheet with parchment paper, spray lightly with cooking spray and set aside.
-Sprinkle counter with flour and roll dough to be about 18×24. Spread with softened butter over dough, being sure to go right to the edges leaving a 1-inch strip untouched on one of the longer sides of dough.
-Dump brown sugar and cinnamon mixture onto the middle of the dough and spread with your hands, creating an even layer over top of the butter, still leaving that 1-inch strip of dough untouched. If you have any filling that falls off the sides of the dough, use a bench scraper to replace. Lightly press the sugar mixture into the butter using a rolling pin.
-Roll the dough up into a tight log, finishing with the plain dough on the bottom to seal the entire thing together. Cut off the uneven ends to even out the log. Slice your rolls into 1 1/2 inch rounds and place on prepared pan. Bake about 20 minutes or until tops start to brown lightly.
-While the rolls are baking, make the frosting:
Beat butter with an electric mixer until creamy.
Gradually, about 1/2 cup at a time, add powdered sugar, waiting until each cup is completely mixed before adding more. With mixer on medium-low speed, add the heavy cream, one tablespoon at a time. Once ingredients are well incorporated, gradually increase speed to high and beat for about 30 seconds. Add vanilla extract and stir well.
-frost using half the amount made. Then after they have cooled a few more minutes, frost again with remaining frosting. The first frosting will melt down into the rolls and the second layer should stay put. Serve warm and enjoy:)

what is a better treat then a chocolate-filled cookie?
i would like to share this amazing amsterdam cookies recipe, to bless your mouth!
ingredients:
2 cups all-purpose flour
1/2 cup + 2 tablespoons cocoa powder
2 tablespoons whole milk powder
2 teaspoons cornstarch
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon instant espresso powder
3/4 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
160g white large chocolate chips
-Measure flour into a large mixing bowl. Sift cocoa over top of flour. Add milk -powder, cornstarch, baking soda, salt and espresso powder. Whisk until evenly blended and set aside.
-In a mixing bowl or the bowl of a stand mixer, cream butter with sugars for 1-2 minutes on medium-high speed until fluffy. Beat in eggs, scraping down the sides of the bowl as needed. Mix in vanilla.
-Add half of dry ingredients and mix slowly until partially incorporated, then add the remaining dry ingredients and mix, scraping down the sides of the bowl, until no streaks of dry ingredients remain.
-Cover and chill dough for about 2 hours or until firm enough to handle; alternatively, you can use a medium cookie scoop to divide your room temperature dough into balls (about 40g each) on a baking sheet, then lightly cover and refrigerate for about 2 hours until firm enough to stuff.
-Preheat oven to 350 degrees F or 175 degrees C.
-Stuff the cookies by splitting one 40g dough ball in half. Flatten out each half slightly, leaving one flattened piece in your hand. Place 2 white chocolate chips (or if using small chips, about 7-8g each cookie) in the center of the circle, then top with the other circle. Press edges together to seal in the white chocolate, then roll re-shape into a slightly flattened “ball” of dough, not more then 2 inches in diameter by 1 1/2 inches tall.
-Arrange on a parchment lined baking sheet with a generous 2-inches of space between cookies.
-Refrigerate shaped dough balls on baking sheet for 10 to 15 minutes. You can also freeze the balls as well to bake at a later time (freeze completely on baking sheet, then transfer to a container or ziplock bag labeled with the recipe name, date and baking instructions{recommended}).
-Bake cookies for 11 to 12 minutes (slightly more if baking from frozen) or until tops are puffed and matte and edges are beginning to darken. Remove from oven and let cool for about 10 minutes before eating.
enjoy:)
