Our late Mom was a champion cook, especially of gebecks (baked goodies). Her banana cake with chocolate icing was to die for. So why did I wait so long to bake my first cake? I don’t know, but Covid 19 does strange things to all of us.

My wife, Shuli, also a great cook during this pandemic, claimed that it was no big deal, and offered to help me invent my dream “health cake”. Meaning healthy ingredients, no added sugar, no margarine, and as little flour as necessary.

So here’s what we did: mashed three over-ripe bananas, added one diced apple, some whole, undiluted tehini (I’m vague on amounts not because I don’t want you to copy me, but because I didn’t measure), two eggs and about 60 mL of vegetable oil.

Then added whole oats, a few tablespoons of flower, twelve hand-crushed walnuts, and a small sachet of baking powder.We mixed that around until it formed a goop.

We applied oil to the inside of two paper cake thingies, and scooped the goop in.

We threw them into the preheated oven for thirty minutes baking at 180 degrees Celsius.

It looked good, but would it taste good? After all, a health cake. No sugar, honey or molasses.

Not bad at all for a health cake.

I like it. Shuli likes it. The kids have asked me to bake them one. What can I tell you? I’m in the baking business.

My lesson: When Covid 19 has you going bananas, bake a banana cake.
