Introduction

 

My name is Lilly Robertson and I love to cook and bake. I like to try many new recipes and I’m going to share with you some of my favorites. My dad’s side is part Hawaiian so we love to eat Hawaiian food. My dad also spent two years in Brazil so we also like to make food from there. I love to watch the food network for inspiration for recipes and I hope that this book will inspire you to cook or bake.

Healthy Chili

My mom always wants to stay healthy so this is a healthy dinner recipe that we love to use. We usually have this for dinner once a week and it’s surprisingly easy. My dad also can’t eat beans and adding the zucchini adds a lot of extra flavor and nutrients.

 

1 to 1 1/2 pounds ground turkey

1/2 cup diced red onions

1 Heaping Tbs chili powder

1 Tbs minced Garlic

1/2 tsp crushed red pepper flakes

15 oz. can white beans

15 oz. can kidney beans

15 oz. can black beans

15 oz. can pinto beans

15 oz. can lentils or adzuki beans

4 cups chopped zucchini

4 cups tomato soup

1 heaping tsp sea salt

Kalua Pig

This is a recipe we make for every luau, family get together, or just for a regular family dinner. This recipe is quite simple but delicious. My family really enjoys this tasty recipe and I hope you do to!

 

Wrap a pork butt in banana leaves and put it in a crock pot for a few hours. Add whatever seasonings you like.

 

To make it taste even better add rice!

Just have a 2:1 ratio of water to rice.

Taco Salad

This is my family’s taco Tuesday meal. It’s very simple and yummy. You can make tacos, salads, or quesadillas with this recipe.

 

Taco Meat

1 pack of turkey meat

taco seasoning and salt

 

Guacamole

2 avocados

minced tomatoes and onions

garlic salt

salt

 

Salad

2 heads of lettuce

1 cucumber

tomatoes

You can add whatever you want!

Pao De Quiejo

These Brazilian Cheese breads are absolutely delicious and addictive. We make them with about every Brazilian meal we have. My whole family loves them and we devour them in minutes!

 

4 cups tapioca flour

1 cup milk

1/2 cup oil

1/2 tsp salt

2 cup Parmesan cheese grated

2 cup mozzarella cheese grated

3-4 eggs

Corn Bread

We use this recipe for chili, potatoes, and lots of other meals. This cornbread is fluffy, tasty, and very easy to bake.

 

1 cup milk

1/4 cup butter

1 egg

1/4 cup cornmeal

1 cup flour

1/2 cup sugar

1 Tbs baking powder

1/2 tsp salt

 

cream together milk, butter, and eggs. Then add in all the dry ingredients.

Haupia

This was always one of my favorite snacks my grandpa and grandma would make. Haupi is a coconut pudding cut into squares. We take it to luaus and other special events, it’s always a big hit!

 

1 can coconut milk

5 Tbs cornstarch

5 Tbs sugar

3/4 cup water

 

Heat the coconut milk over the stove. combine sugar and cornstarch in a bowl and add the water. when the coconut milk starts to simmer add the cornstarch, sugar, and water mix. whisk until thick, about 10 minutes. Pour into a 8×8 pan and let it cool before you put it in the fridge.

Cinnamon Rolls

Cinnamon rolls are one of my most favorite treats ever! I love the cinnamon and cream cheese flavor and all in all it’s just very yummy! They do take quite some time to make, but trust me they are worth it!

 

Makes 36

7 Tbs yeast

2 cups milk

1 cup sour cream

1 1/2 cup sugar

1 cup butter

1 Tbs salt

6 eggs

12 cups flour

Filling

2 cups brown sugar

4 Tbs cinnamon

1 cup melted butter

Frosting

5 1/2 cups powdered sugar

1 1/4 cup butter

1 cup cream cheese

 

Mix together milk, sour cream, butter, sugar, salt, and eggs. After mixed add in the yeast. Pour in the flour gradually and let the dough rest. For the frosting cream the butter and cream cheese then gradually add the powdered sugar.

Mini Lemon Tarts

These are my new favorite treats. You can definitely taste the lemon with the cookie and curd. I make these for baby and bridal showers and other fun events. And as my dad likes to say he thinks that they are a healthy cookie!

 

Tart Shells

1/2 cup butter

8 oz cream cheese

1 tsp fresh lemon zest

1 1/2 cups granulated sugar

1 egg

1 tsp vanilla

1 tsp lemon extract or juice

2 1/4 flour

1/2 powdered sugar

1 Tbs baking powder

Lemon Curd

4 large egg yolks

2/3 cup sugar

1 Tbs lemon zest

1/3 cup fresh lemon juice

1/8 tsp salt

6 tablespoon butter

Mix egg yolks, sugar, lemon zest, lemon juice, and salt in a double broiler. Add butter off of the heat and stir until thick.

Apple Pie

My favorite type of pie is an apple pie. This recipe is the key to a perfect pie! You can use this recipe for Thanksgiving, Christmas, 4th of July or any other occasion.

 

Crust

2 1/2 cups flour

2 tsp sugar

1 tsp salt

1/2 cup butter

1/2 cup vegetable shortening

1/2 cup ice water

Filling

1/2 cup butter

3 Tbs flour

1/4 cup water

1/2 cup white sugar

1/2 cup brown sugar

8 apples – peeled, cored, and sliced

 

Mix together the flour, sugar and salt. Once that’s done add in the butter and shortening. Then add in the cold ice water. For the filling melt the butter over the stove, then add in the flour to help it thicken. Then add in the water and sugars. lastly add in the apples and pour the filling into the blind baked crust. Blind baked means to bake it before you add in the filling.

Sugar Cookies

I’ve been using this recipe for a long time. These cookies are great for decorating and you can have them on any occasion. Something special about these cookies is that we add almond extract, the almond gives it more flavor and makes it taste even more yummy!

 

Cookie

1 cup soft butter

2 cups sugar

3 eggs

1 1/2 cups sour creams

1 Tbs almond extract

5 1/2 cups flour

1 tsp baking soda

1 tsp baking powder

Frosting

1 cup butter

4-5 cups powdered sugar

1/4 cup heavy cream

2 tsp vanilla

pinch of salt

Peanut Butter Fingers

I think peanut butter and chocolate are the best food combinations ever so this is one of my favorite desserts ever! This treat is a bar cookie so you can make them whatever size you want. They are also very easy to take to any event.

 

Bake at 325 degrees for 10-15 min.

Cookie

3/4 cup butter

1/2 sugar

1 1/2 brown sugar

2 eggs

3/4 cup peanut butter

3/4 tsp baking soda

1/8 tsp salt

1/2 tsp vanilla

mix together and add

1 1/2 cup flour

2 cup oats

top with 1 cup melted peanut butter

 

Chocolate frosting

1/3 cup butter

3 Tbs cocoa powder

1/4 cup milk

3 1/2 cup powdered sugar

1 tsp vanilla

Canadian Caramel Popcorn

I just discovered this recipe and it is absolutely delicious! It’s a really simple recipe but tastes amazing! I take these treats to lots of people and they have all loved it.

 

1 cup butter

1/2 cup Rogers Golden Syrup

1/3 cup sugar

dash of salt

dash of vanilla

1 cup popped popcorn

 

Melt the butter over the stove. Once melted pour in the syrup, sugar, salt, and vanilla. Stir consistently for about 5 minutes when it starts boiling. When that’s done pour it over the popped popped popcorn.

Lemon Macaroons

Macaroons are probably the most sophisticated dessert I’ve ever made. Macaroons are a hard dessert to master and it takes a lot of practice, but they taste great! I also love lemons so this recipe is one of my favorites.

 

Cookie

3 egg whites room temp.

1/4 cup sugar

1 1/2 cup powdered sugar

1 cup almond flour

1/4 tsp cream of tartar

 

Lemon Curd Filling

4 large egg yolks

2/3 cup sugar

1 Tbs lemon zest

1/3 cup fresh lemon juice

1/8 tsp salt

6 tablespoon butter

Mix egg yolks, sugar, lemon zest, lemon juice, and salt in a double broiler. Add butter off of the heat and stir until thick.

 

Cream Cheese Frosting

8 oz cream cheese

1/2 cup butter

3 cups powdered sugar

1 tsp vanilla

dash of salt

 

For the cookie, whip your room temperature egg whites until it starts foaming, then gradually add the sugar. Mix together the dry ingredients separately. Once your egg whites and sugar have stiff peaks gradually fold in your dry mixture. Then pipe them onto a pan with parchment paper and have them wait for at least 30 minutes.

German Chocolate Cake

I recently made this cake for my grandma’s birthday and we all loved it. I really like pecans and coconut so I think it tasted pretty great. I think you will really like this recipe!

 

Cake

2 cups sugar

1 3/4 cups flour

3/4 cup cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 teaspoon salt

2 large eggs

1 cup buttermilk

1/2 cup oil

2 tsp vanilla

1 cup boiling water

 

Coconut filling

1/2 cup brown sugar

1/2 cup sugar

1/2 cup butter

3 eggs

1 Tbs vanilla

1 cup chopped pecans

1 cup shredded coconut

 

Chocolate Frosting

1/2 cup butter

2/3 cup cocoa powder

3 cups powdered sugar

1/3 cup evaporated milk

1 tsp vanilla

 

For the cake mix the sugar, flour, cocoa powder, baking powder, baking soda, and sat. Separately mix the eggs, buttermilk, vanilla and boiling water. Then add in the dry mix gradually. For the filling melt the butter and sugar on the stove, then add your eggs, make sure you consistently stir so the eggs don’t scramble. Then add the pecans and coconut. For the frosting mix together the butter, cocoa powder, and sugar. Then add in the milk and vanilla.

French Toast

French toast is my favorite breakfast. It’s very easy to make but delicious. We make this on special occasions because we all love it, but it tastes great whenever!

 

Cinnamon bread – best type is from Great Harvest!

2 egg whites

1 egg

2 tsp cinnamon

 

Mix together your eggs and cinnamon. Then dip in your bread and put it on a pan on the stove and let it cook until golden.
